Have you ever tried pancetta? Slightly saltier than most bacon, but very nice.

I made sandwiches tailgating at the last Pats game. Tenderloin steaks, grilled with pancetta and grilled onions held in place over the steak with a slice on monterey jack cheese on a grilled, buttered roll. Yummy!
